Nostalgically I'd like a Yamaha YZ 80 as it was the first bike I rode.
Then the Yamaha DT 150 because it was what I lusted after when I was 15.
The only other bike I can remember from back then was when the PE teacher bought a brand new 'Katana' - but you probably can't remember them.
Today - a Norton super-bike, and both the BMW and the KTM that Ewan considered for THE trip.

A mid '40's Harley model W. It was a 750 designed to military specs, but the guys at Indian ignored the specs and produced a 900 for the military and got the majority of contracts. So there were not as many produced as could have been and their age makes them somewhat rare.

I own a old ZXR750H2, which goes like the clappers and was in my opinion one of the first Jap superbikes. I've also owned several Kawasaki's in the past being the Z650's, Z750. Those have always been my favorite manufacturers, though I have also longed for a BSA 500 twin, only because my Dad owned one.

I would have a transformer bike that converts to anything I want to ride / look at. 1977 Bultaco Sherpa 325 one day, BSA DBD34 Gold Star the next, VFR 750 the day after, and Sheen's 500 to put in a glass cabinet, when i'm not using it.
You did say one bike and you did say I wouldn't have to be realistic!

Vincent Black Shadow, early model Honda Fireblade, Triumph Rocket III, Ducati 998, Honda RC30. Any of these would do nicely. Otherwise the Bandit 1200 I have is more than adequate.

I have raced bikes with a certain amount of success, so you may be surprised at my choice...
I have also raced cars and taught high speed driving to the 'establishment', again, you may be surprised at my choice...
My first motorcycle was a Triumph Tiger Cub (200cc single cylinder four-stroke) and the bikes I have been aquainted with have been many and varied, so again, I think you will be surprised at my choice:
A great big fat Honda Gold Wing with all the trimmings! (But I'll go without the trailer thanks...)
