because after the credits in the first movie there is another scene. the monkey is still alive and he takes a piece of the cursed treasure after everyone is gone. just because everyone else was uncursed, you could still get cursed.

In Pirates 1 after the credits they show a scene where the monkey takes a medallion from the chest. That's what makes him undead in the second one.

You know, I wondered this, too.... and interestingly enough, Channel 12 was running Pirates of the Caribbean: the Curse of the Black Pearl, just three hours earlier.
The other answers cleared that up for me. I think I'll watch the end credits tomorrow and see for myself.

I guess for the same reason Barbosa was back at the end of the movie after Jack Sparrow (sorry, Captain Jack Sparrow) shot him in the first movie. Chalk it up to Hollywood magic, I guess.
