The purpose of an egg shell is to protect the growing creature inside from the environment. The white of an egg is like a human's amniotic fluid. The white protects the creature while it is growing. The white is sort of like a cushion or shock absorber.

The yolk of the egg is not the embryo. The yolk of an egg is the food for the embryo. Ever cracked open a chicken egg and seen a little white thingy attached to the yolk? That's the beginning chick. When you cook it, it just melds into the white of the egg.

Let me get this clear. You are asking a question that is an answer from a biology book? That's not possible. It's either a question or it's an answer. Do you have the biology book? Can you look it up?
First of all, let's just try a little common sense. Have you ever cracked open an egg? What's inside of it? Is it a nice, solid, compact mass that stays egg shaped even when you take the shell away? No? Okay, what happens to it? It runs away, right? So the egg shell is the packaging that keeps it all together until the chick is ready to hatch.
The egg white is protein rich food, that nourishes the chick while it is growing (it can't walk over the the feeder, so it has to have a food supply inside the shell) and when the egg white is all used up and the chick is big enough to hatch, it chips its way out of the shell and emerges as a chick.

The shell of the egg is to protect the embrio inside and keep it safe untill the baby chick is old enough to break out of the shell and have a parent to protect it.

The egg white is to provide food for the embrio and to help it grow. It nourishes the embrio and provides for it untill the embrio turns into a baby chick and has a parent to help it feed.
