Probably Hendrix all though I don't think he would have been nearly as popular today if it wasn't for him dying so young.

Hendrix is generally regarded as the #1 guitarist in the world, and Eddie consistently comes in lower in the polls. Why? probably creativity, more than anything. Van Halen had the chops, alright, but Hendrix took you to a place that no one had been before. I'm still astounded at his skill level and creativity when I see old video. No slam on Eddie, Eruption is one of the greatest guitar solos of all time. But Jimi Hendrix IS the man!

Jimmy Hendrix made sounds unique to his era. Sounds that had never been touched on before. He generally speaking IS the best guitar player ever.
Having said that, there are other greats. Eddie Van Halen is quite good, and so is Jimmy Page.

Hendrix was more versatile! He could play rock, blues, R&B (Electric Ladyland) even dabble with jazz (Little Wing). Van Halen never stepped outside the rock genre. But he is a legend. Every hard rock and metal guitarist that came after him owes him a large debt. All that tapping stuff was his. That metal soloing technique was first pioneered and perfected my Van Halen. (The jazz guitarist Stanley Jordan took this technique even further but thats another answer)

He is a legend in his own time. He even has his own "wing" at the Experience the Music Project at Seattle (Jimmy Hendrix Experience)...
