"Unchained Melodies" by the Righteous Brothers has been covered over 3000 times. I think this is the most.
The Beatles' "Come Together" and Gershwin's "Summertime" has been covered about 2500 times, so they come a close second. Not too many folks want to cover "Yesterday" by the Beatles because it is such a classic song that it has been left alone by many.
