I'm looking for movies which show stereotypical villains - kingpins, the mafia, robbers, murderers etc - as having a 'human' side to them (through background, personality, behaviour and so forth)...in other words, films which make it hard to fully condemn the criminals due to mitigating factors. Any recommendations?

The one film that sticks out above all based on your description is "BLADE RUNNER" with Harrison Ford and Rutger Hauer.

Goodfellas, to an extent. I think The Bronx Tale a little bit, it showed them as nice understanding guys.
Sopranos shows Tony as a Dad and family man, someone you can relate to.

Payback has Mel Gibson as a thief who agrees to do a job but then they refuse to pay him after he steals something for a mobster. He than goes after the Mob trying to collect the money they owe him. It was good.

Godfather definately...also not to much as mafia but the professional was a ggod one with natalie portman.
