You could take the "facts" from some of the emails, check them out on www.snopes.com or urbanlegends.about.com and debunk them. Send the email as a reply back to her, showing how the information is wrong.
Be sure to include the web address back to the site, so she can read it for herself.
I did this with my mom and she stopped sending her pro-bush crap my way and actually started to look long and hard at the royal shrub...she's actually said she thinks he's done some things wrong!

Simply mark them "Spam" and you'll never see them again.

When she mentions any particular one, say the one about the cat that went to heaven, counter with "you mean the MOUSE that sent the cat to heaven by making him a Christian?" And so forth. Do it to her two or three times and she'll shut up. (She might think you're a little bit of an airhead, but so what?)

Collect them and place them in one file folder according to the date when you received the email. Or, simply delete her email as it comes.

Forward them to a liberal friend, and subscribe your mother-in-law for the ACLU newsletter (Hey the American Commie Party prob has one too). Orrr, just click "delete"

be happy your mother-in-law even bothers talking to you. Some don't, and she will never know if you just delete them.
