most likely because he moves his head a lot when he is laying down on a blanket or anything else that produces lint therefore lint is getting entangled in it. that happened to my daughter a lot as a baby.

That's weird. My son used to love exploring under the couch when he was a crawling baby. Perhaps it's time to life the couch, bed, etc , to vacuum under them.
Trust me, it's good to keep it clean under there. One day I caugh my 6 month old chewing on a hairball that the cat coughed up under there!

If his hair is real fine like my 7th month old it seems to pick up everything, i think it has to do with the texture and being so fine

Most likely, it is due to static electricity. Use static cling sheets on all of the fabric that he is coming in to contact with. A humidifier in his room can also lower the static.

Maybe you need to vaccum or wash his bedding? Is his hair curly? Cause curly hair get's everything stuck in it.

It's crats cradle or cats cradle or something. A lot of young babies have it. You can get a shampoo, I think, for it.
