Just a point of reference, Venice, Florence and Rome are all in the same country. I'm sure you meant "what the weather will be like in these three *cities*".
I went in November a couple of years ago,and I found the weather to be quite nice, but the locals though it was cold. I was walking around with shorts on, and they were wearing wollen hats. It got up to 78 or so. So, in October, it will probably still be warmer.
The beaches around Rome will most likely be closed for the season because it is "cold". The water actually is cold at this time of year (even from a Canadian perspective, it was cold!) so perhpas don't have going to the beach on the top of your list.
It did rain for us as well, and if you are on the coast, especially Venice, the rain won't fall straight down. So bring a compact umbrella and jacket.
A significant number of my female friends who have travelled through Italy have told me of stories where men approached them to show them around the city or even to marry them! Just take this with a grain of salt, always be a little warry and know your boundaries!
Also, in Rome there are some groups of pick pockets that work in gangs that you should keep a look out for. Some will hold up signs in English like "Popcorn" and when a curious tourist comes in to investigate, they'll go through your stuff. Just keep your eyes open for this kind of behaviour and avoid them.

It starts to get colder by the end of september. The last 4 years I have been there in Sept. and it is beautiful but as the month goes on it starts cooling down. My cousin lives there (in Treviso) about 20 min from Venice, and she leaves the end of October, while it is still reasonably warm, to come to the us for the winter. Her husband stays to go skiing in Cortina. So my answer is it is rather cool but still reasonably pleasant. The last two years it has been raining in Florence by the middle of Sept. but it is still warm. I would say take clothes for the high 60* and low 70's.
The locals in all of those cities dress for shopping. If you wear the kind of clothes we wear here you will feel like a tourist. Which is ok. I am leaving Sunday and will be going to all of those places. I am taking a couple of long day type dresses. several pair of capries. several light weight tops a couple pairs of shorts and one sweater. (for october I would suggest a couple of warm tops and sweaters. An evening outfit. The one thing I really want to stress, is COMFORTABLE SHOES. Sneekers are NOT the best choice. Walking on cobblestone is much different than walking around here. After the first year I learned my lesson. I spent the whole next year looking for comfortable shoes. I ended up with Sketchers. Their sandles are great. My daughters and I both bought 2 pair each and we could have walked forever. What a difference.
One other thing. If you have the chance, go to a little town outside of Venice (really Treviso) called ASOLO. It is beautiful. If you can, have lunch at the Cipriani hotel. Food is wonderful and so is the view. The town is exquisit and well worth the time.

I'm Italian, so I can answer really easily. In italy October is a very mad month, you can find a really nice sun (not very hot, but fantastic!) as you can find rain and very cold climate. The worst is fog. I suggest you to bring with you your spring clothes and something tha you wear in winter.
