I went to school for 2 years to become a dental assistant, I don't do that now but I didn't have any courses in nutrition in that program nor was it ever needed on the job. Your job isn't to tell the person how to eat to have better dental health.

You really don't need to know nutrition benefits, etc, but it definitely wouldn't hurt. But that is the dentist's job to tell patients what or what not to eat.......But again, it wouldn't hurt.
