If you have set up iTunes to keep all your folders organised it will copy all the music in one folder called iTunes Library which is located in My Music. Just copy that iTunes Library folder to your external hard disk.

If you haven't set up iTunes that way than you will have to manually copy all the songs to the hard drive. Or you can select the option to keep the folder organised and than go to advanced menu and select consolidate library. Than iTunes will copy all the music in one folder and than you copy that folder to the hard drive.

Cheers!
