This subject is a little over my head but here is a start:

We can conceive of the 4-dimensional spacetime that we live in. We perceive the 3-spatial dimensions that are all around us. Front/Back, Right/Left, Up/Down. Any movement you make is through a combination of these dimensions. We've also accepted (thanks to Einstein) that time is also a dimension (3 spatial plus 1 time equals 4 dimensional spacetime.)

The idea of extra dimensions was considered for years in theoretical physics (see Kaluza-Klein theory) but it was string theory that really gave the concept a boost. String theory in a very watered down sense is the idea that everything in the universe is made up of tiny vibrating strings that make up every fundamental element and force in the universe. Smaller than atoms, smaller than quarks, there may be strings. In order for the string to vibrate about and take on different forms they must vibrate in other spatial dimensions. These dimensions would be absolutely tiny and unmeasurable with our current technology, but they would be there.

Theoretical physicists use mathematics to work out the details of these theories. It is hard to conceptually explain the number of dimensions but according to the equations of string theory the number of tiny curled up spatial dimensions needed for the theory to work ended up being 6. That means that there are 3 large extended spatial dimensions, 1 time dimension, and 6 small curled up dimensions, bringing the total to 10. (See Calabi-Yau space for a visual example.)

The problem with string theory was that it took on 5 different personalities, with 5 different equations, which wasn't as simple as the theorists had hoped. It was then suggested that the 5 equations could be expressed as the same thing said 5 different ways by another theory which came to be known as M-Theory. M theory builds off of string theory and requires the addition of 1 extra, large spatial dimension bringing the total up to 11. M-theory takes the concept of strings and expands them out to be a membrane on which our entire universe is floating, possibly one of many other universes in the 11th dimension or in some higher dimensional space known as hyperspace. Again these are just theories and I may have explained some of this wrong but I would suggest reading up on both String and M-Theories.

To say that something has 11 dimensions means nothing unless we know the nature of these dimensions and their units. Also, anyone postulating the need for more than 3 spacial dimensions should be required to state if this dimension is observable and by what means.

I hope Professor Hawking himself answers your question personally because I would not even know how to get beyond the 4th dimension except to say that a lot of theoretical models are involved and I have never been quite that good with mathematics.

By a 4th dimension I mean to treat space/time as a 4th dimensional model.

there's a PBS special on String Theory where they talk about the 11 dimensions of physics, look it up

any dimension higher than the four is only hypothetical. M theory predicts the existence of ten spacial and one time dimension. only three spacial dimensions are known to exist, and since the existence of the additional seven dimensions is only hypothetical they are not named.

North/South
East/West
Up/Down
Up 45 degrees/down 45 degrees
Up and Left/Down and right
Up and Right/Down and left
Right/Left
Front/Back
North-Northeast/South-Southwest
North-Northwest/South-Southeast
Left-Front/Right-Back

There are an infinite number of dimensions.

Only 3 dimensions are necessary to plot the position of something, which is why we say there are 3 dimensions.
