Well, I think for job stability and benefits, public sector jobs are good...you know, like county government, state, etc. I'm not sure what the job market is, but usually these are posted on web sites for those government entities. Also, there are jobs for all education levels in the public sector.

The only way to have job security is to own a small business or home based business in the right field. With a home business there is no cap on your salary so if you aim high, you will earn more income than any conventional job would ever pay. You are also creating leverage and residual income, also not attainable in the workforce. If you invest less than $200 and treat it like a million dollar business, meaning you dedicate your time to it like you would if you owned a restaurant or retail store, and set goals, you can earn unlimited income. I work with people every day who earn in excess of $10k/mo and I am well on my way. All you need to do this is a vision of what you would like to earn, and the willingness to learn how it is done. I can't think of a better job.

As far as job security goes, being a teacher fits the bill. Good educators are always in high demand, and always will be. And once you get tenured, its all good (within reason, of course). Most secondary teachers around my neck of the woods (NE) make ~ $30-35,000/year. If you have a master's or doctorate, that figure goes up. Of course, the hours and bureaucracy are not pleasant and certain students can really be nasty. But you would be secure.

Join the military. In this day and age, there is no such thing as job security. So many businesses come and go, downsize, cut back or outsource. The only security these days is the security and confidence you have in yourself.

Most jobs require a college education. You can be a teacher, a doctor or a lawyer.
