Look at the person as though they were stupid.
Or say "yes" and do nothing about it.
You can go back on your word and say "did we shake on it?"
I don't know you, but the only kinds of people who ask THIS question have a hard time saying no. People like you get conned all the time. You are semi socially inept. You have strong feelings for wanting to do good for people, without knowing the right way to do it....
I recommend you develop your sense of self assertiveness and the fact that you have to look after your boss, yourself, and your family... Be proactive, active, and aggressively passive in your life. Don't let people walk all over you, etc...
The best way to say no, and not feel guilty. Is to first not feel guilty, and than say no.

If you know your no is the right thing then there is no reason to feel guilty. Guilt comes from a feeling that you did not say the right thing. Maybe if we thought a little more carefully before we spoke a definitive no we would feel more comfortable with our decision to say no to the particular situation. And if we do feel guilty for invoking no when it maybe was not appropriate then we can make the decision to admit our error and recant our no. That pretty much covers it.

Saying no is the easy part. Working on why you feel guilty is the hard part.
JUST SAY NO, they do not pay my mortgage, nor do I care what they think.....once you can learn this motto and feel it, it gets easier
