NLP gives the psychologist an idea of the mental landscape the patient is surrounded by - they words a person chooses to express themselves can tell you a lot about their social environment as well as how one "thinks" about themselves and the world around them.

Hypnotism (while debatable) can help the patient to "break through" their concious mind and ego driven sense of self and social "acceptablity". Patients are more inclined to anser honestly to questions they may feel uncomfortable about in a conscious state of mind.

Verbal communication - (in addition to NLP) helps give the psychologist an idea of where the patient palces importance - the inflection of certain words, the lilt of voice during certain subjects can help the therapist gain additional insight into unspoken "rules of thumb" about the clients interests, personality, and mindset.

I don't have direct experience with hypnosis, but I know people who have done it to lose weight.

I feel NLP and non verbal communication are very valuable to the psychologist. The first answerer is informed about the subjects, but I think NLP and non verbal communication are tools the psychologist uses to gain the trust and confidence of their patients. If a patient receives best on a certain NLP channel or two, they will use those channels to foster the trust needed to be effective as a psychologist with that patient.
