If allowed to ripen on the tree the yellow would have the most sugar. Once they start to turn brown they are in effect dieing and giving off their sugar. But the ones you buy in the store all have about the same sugar since they are usually picked at the same stage of ripeness. The ripening that occurs after harvested neither adds to or removes the sugar already given to it by the tree.

At some stage of brown, more sugar is converted to alcohol by fermentation than is converted from carbohydrate. Or you could mess up the answer by refrigerating the banana, slowing both conversion processes but turning the skin brown much sooner.
The obvious way to find out is to measure it experimentally, under controlled conditions.

Bananas do no longer turn green, they initiate green and stay that way till they start to ripen, while they turn yellow. As bananas start to flow to pot they start to coach brown and soften
