Hugo Weaving - The Matrix trilogy and the Lord of the Rings but don't know the third. And Harrison Ford wasn't in The Hunt For Red October, it was Sean Connery and Alec Baldwin

I cant think of any actors who have been in all three films for each of three trilogies (think this is what you were asking, everyone else seems to just want to name people who've been in one trilogy)
Can think of lots in all three of two trilogies:
Hugo Weaving (The Matrix and LOTR)
Orlando Bloom (LOTR and Pirates of the Caribbean)
Harrison Ford (Indiana Jones and Star Wars)
Sir Ian Mckellan (X Men and LOTR)
Mike Myers (Austin Powers and voice in the three Shrek films (last one due next year)
There may be actors who have been in one or two films of each trilogy and covered three trilogies in total, the only one I can think of off hand is John Rhys Davies who has appeared in the Indiana Jones and LOTR trilogies as well as doing a voice in the cartoon version of Aladdin, of which there are now three films.

Just before Titanic came out, he starred in 7 of the top 10 grossing films of all time.
