Start off with what different ways you can define equatable treatment, and whether or not equitable treatment is always the same as fair treatment. For example, should I treat you and a starving man equally when you both ask for food? What about affirmative action, which is an attempt to correct previous inequality by giving one group a slight advantage in the present.
Do religious belief systems ask us to be equitable? Some, like Islam, are very concerned with social equality. Others, such as Hinduism, operate within a caste system that is by its nature not equitable.
That's not to say you should attack the very notion of equitable treatment. You can and should talk about the positive aspects of equality, and different examples of it that we cherish, such as democracy.
The important thing is to not underestimate the complexity of the subject. Surprise your reader with considerations that he or she may not have even considered in giving the assignment. Teachers love being surprised by insight. Good luck.
