Because slugs eat potatoes! I am not been flippant, they really do. I can tell you how to control them. If you don't mind chemicals you can buy slug pellets from garden centres, usually based on Metaldyhide. Another way is to put an old saucer filled with beer near your potato rows , the slugs will go for a drink and drown! There are slug resistant varieties such as Sarpo Mira. Unfortunately the best potato you can grow for chips, Maris Piper, is also the slugs favourite!

You have left them in the wet soil too long. You should really dig them all up when they are ready to be eaten, rather than as and when you need some potatoes. Unfortunately, it is a compromise between keeping the potatoes seedless, or ripe with potentially some small slugs inside.

The slugs are probably quite tasty though.

I presume these potatoes came from your garden where slugs are or you are storing them in a basement where the slugs are.
There is not much you can do about them if that is the case except through the bad potatoes away.
You might want to put a few pans of beer out in the garden, slugs will crawl in and die. They love beer.
