start with a wiffle ball at a short distance and then get progressively further apart.
There are two nice things about a wiffle ball ; if you miss it, it won't roll far and you need two hands to catch one

Start by tossing the ball underhanded, about 3 - 4 feet away, back up a foot as they get the hang of it.
Teaching them to catch over handed is best if you bounce it first a few feet above how tall they are, so they can get the look of it coming down toward them.
I would also start with a tennis ball, over baseball, a tennis ball doesn't hurt when it hits them.
Another good hand/eye game is for them to bounce a tennis ball off your garage, or block wall. Makes a great eye/hand exercise.

One problem a lot of people have in the beginning is "lunging" at the ball. You have to let the ball come to you. Catch it like an egg--go with the ball. Like someone said before, if you throw it at or near the person's head, they will have to catch it (or duck :) ) to keep it from hitting their face. You should be throwing it chest-high anyway.

Throw it softly, and also, teach them to use two hands in the beginning. Additionally, teach them how to catch the ball in different locations--specifically below the waist, above the waist, and backhand--as catching the ball in different spots requires different form.

most of these are pretty good answers but most importantly they cant be afraid of the ball if they are afraid every time they go to catch it theyll move out of the way and try to reach for it wich is a very bad habit so make sure theyre not afraid of the ball and tell them to stay in front of it and basically they just have to learn just by trying to catch it and theyll progressively get better

just keep throwing it at them, eventually they will, no pun intended, "catch on" and catch the thing
