Polymers are chains made from groups of atoms. . Protein is a polymer of amino acids. starch is a polymer of sugars. Non-fat dry milk would have polymers of milk proteins . Non-fat milk contains lactose(sugar) casein(protein) a few salts and other sugars and over 90% water. So dried milk has the water removed.
