To euthanize a fish, put him/her in a water tight zip lock bag with some of his/her water and set him/her in the refrigerator for an hour, then move him/her up to the freezer for an hour.
The cold puts them to sleep and the freezer finishes it. It is very humane.

As seen in the link I have provided on how to humanly euthanize a fish:
Unacceptable methods of euthanasia are: freezing, boiling, chopping, removing the fish from water, using a seltzer tablet, slamming, pithing, decapitating, or flushing down the toilet. These methods are slow, torturous, stressful or violent. Clove oil followed by vodka is both inexpensive and humane. The fish goes to sleep just like we might before an operation, and simply doesn't wake up.
The link will tell how to properly put him "to sleep" with clove oil and vodka.

Put him in a small container with enough water to cover him and add a few drops of clove oil. It is an anesthetic to fish. He will go to sleep and then put him in the freezer for an hour or two. That will do the job. It is the most humane way to put a fish down.
If you don't anesthetize him, he will suffer as the water freezes. Fish do not have the luxury of hypothermia like humans do. We just fall asleep when we freeze to death, they are aware of their cells bursting as they freeze, until they die, unless you use the clove oil.
Don't flush him either, there is no water down there, just loads of crap. He would just lay there in it until he suffocates.

Interesting question nobody ever thinks about a fish or anyone even thinking of it being a pet. I lost a Gold fish when I was a teenage and I remember it sadden me when it died. Then I found out that Gold Fish only live one to two years. So yours is probably dying of old age. I don't think it is suffering.
I am agonizing now as we have to put down our 9 yr old Border Collie on Monday and believe we I couldn't be anymore sadder then one losing a child. Best to you, Gypsy

My vet said the most humane way to put a fish down, is to put it in a glass of water, put the fish and water in the freezer, as the water gets colder, the fish's metabolism will slow down, and it will go to sleep then freeze.

I had this same issue (different fish). My vet recommended I boil him. The water just slowly gets warm and is very comfortable for the fish. They love it and you'll notice as the water warms up your fish will get very excited and may even recover its ability to swim. It is a wonderful way to die.

wrap in him in cellophane and put him in the freezer, Goldfish don't feel the cold like people do since they are fish that overwinter in frozen ponds as long as there is some liquid water on the bottom. when he's frozen, bury him.

The quickest most pain-free way is just to flush it down the toilet. Its very quick and painless.
