The world would still function and look just the same (and if we were to develop some kind of mechanical sight capability, we would be able to tell!) While quantum physics does say that the observer affects the observed, it is not noticeable on the macroscopic scale. Thus, the lack of "observation" that you suggest (if I am reading correctly into your question) would not result in a lack of any supposed "influence" that we have already had. In other words, our visual ability (observation) has not in and of itself resulted in any alterations.

I say Earth would function/look different. If every animal was blind, then I would think that there was some environmental reason animals didn't evolve the ability to see. Such as total darkness. I think new types of vegetation would evolve because without light, only things that can grow in the dark and withstand the cold would grow. And animals would also function/look different. We would probably have lots of fur and thicker skin. And we would probably have better hearing and a better sense of smell. Of course, that is if anything could live at all.
But on the other hand, we and everything else alive might be deep sea dwellers and the surface of the planet might be a dark, cold, barren place.

Well, the first life form in this planet did not have an eyesight. As life forms evolved so did eyesight. Before animals had eyes, they relied on other senses such as smell. If animals currently did not have eyesight, then the world would be functioning differently and therefore look different. Animals would rely on hearing, touching, smelling and tasting in order to survive. Do we need eyesight to survive? No we do not. The other senses will naturally predominate and everything will seem "normal".

humans and animals evolved eyesight because that will make them better at surviving against predators and easy for them and us to do so many things.it is an evolutionary reaction because of the stimulus light from the sun.
anyway, if there is no eyesight, the world will be different. there are some fishes in the ocean that have no eyes because they live on the dark and deep part of the ocean, so they evolved into something that can feel and track what is happening on their environment. for humans, then looks will not matter, and there will be no color or computer! that will be a boring life.

There are many things that are presently going on that are beyond our eyesight (or any other perception for that matter). Someday, we might find a way to "see" these things, but until we do, they will continue to happen without our knowledge.
Examples from the past:
1. The human circulatory system worked long before we "saw" or understood it.
2. The microscopic world of biology occured long before microscopes enabled use to see it.
3. Elements reacted with each other to form compounds long before we knew of electrons, protons, neutrons.
What is the next thing we will "see" that we have never seen before???
