Brokeback Mountain and Legends of the Fall made me long for the west, as well as A River Runs Through It...lovely!
What Dreams May Come painted a beautiful, if fantastical dreamscape world, as did Legend (an oldie!).
I agree with Far and Away for Ireland (saw that area in real life:) and Lord of the Rings for New Zealand.
Cold Mountain has beautiful scenery as well....

I love The Talented Mr. Ripley - the scenery is gorgeous. I also love the countryside and estate scenes in A Room With A View.

The Lord of the Rings is like a 9+ hour long "come visit beautiful New Zealand" advertisement.
Deliverance has some beautiful scenery, but the rest of the movie kinda makes you not want to go there.

Lord of the Rings, Braveheart, Neverending story, Sisterhood of the travelling pants has some excellent scenery of Greece, The Mummy, there's just so many! I find, though, the movie itself sometimes, can be what really makes you want to go there. An awesome movie can make the dullest places appealing.

Into the Blue, Finding Nemo, and Hook are the best with scenery. They are extremely colorful and just beautiful.
