usually its by smell. They should smell like melon, and not like the garden.
And their "belly buttons" should be a little soft when you press them.

You can tap on the watermelon to see if it makes a hollow sound. Canteloupe should be firm, smell sweet, and the husk on the outside should be even and brown. Green means it's still under-ripe. The water melons should be green almost all the way around, except where they were sitting while still on the vine.

Cantelopes are ripe when there is the sweet smell at the vine end.
Watermelons are ripe when the underside is white/yellow and there is a hollow sound when thumped.

for watermelon, the heavier it is, the more fluid in it and likely more flavour.
for cantaloupe, i only compress them a bit - if they "give" then they are near ripe - make sure there are no soft spots on it, and that it is heavy (ie more juicy). If you leave it out on your counter over night (or even 2 nights) it will be perfect.
sometimes cantaloupes have fragrance, and sometimes not.

you're supposed to knock on them to make sure they're ripe. if the melon is ripe it would sound like a fat guys tummy

You can tell if they are ripe because the harder they are,
they aren't ready to eat yet. If it becomes a bit
softer it's ready

smell- I guess thats the best way with most stuff, my grandma always tapped the watermelon to see if it sounded hollow

they should sound hollow when you knock on them and you should smell them..if you cant smell anything-they arent ripe yet.
