I am a westerner who loves Bollywood movies. The Indian film industry is the largest in the world. Most Indian movies can be 3 hours long with song-and-dance routines interspersed in the story. If you don't speak Hindi, there are English or other language captions on DVDs. Be careful, just as with any movie industry, you can find some poorly made movies.
Here are some suggestions:
Dilwale Dulhania Le Jayenge—longest running movie in Indian movie history to date. Romance/Comedy. Considered a groundbreaking film.
Kuch Kuch Hota Hai—a sweet fun-loving romance/comedy. A blockbuster in India, USA, and UK. Great choreography, cinematography, direction and music.
Devdas—a lavish remake of a classic Indian novel. Considered the most lavish movie made in Indian movie history to date. Romance/Drama.
Mother India – Made in 1957. Considered an Indian classic.
Sholay – another Indian classic in the style of a western. Drama.
Mr. And Mrs. Iyer—comes highly recommended but I have not seen it yet.
Here are a few Indian-made crossover movies:
Monsoon Wedding
Bend It Like Beckham
Bride and Prejudice

MEEEEE!!! Everything about Bollywood is so easy on the eye lol! I love the colours, the dancing, the singing, there's some hot AND talented actors (Aamir Khan and Hritik Roshan being my favourites!!) and the clothes are soooo beautiful! I know some films aren't that original, but you do get the odd gem, my favourite would have to be Lagaan I *think*, but I'm always changing my mind! I love Kajol too, she's so pretty, wish I could look like that :) I have a whole collection! Since I went to India about 2 years ago I've been hooked!

Devdas was a super hit in India, and it was made three times. So that would be a good movie to watch. It is particularly one of my all time favorites.
Kuch Kuch Hota Hai is also a very popular movie. Another one of my favorites
Dil Se is my all time favorite movie... but if you don't understand the Muslim-Hindu fight very well, it may not make sense. But Dil Se was the first Bollywood movie to be widely received by the UK audiences.
Veer - Zaara is also another political film. Very touching and also deals with the Muslim-Hindu relationship.

Well Bollywood films are a class of their own. you can't compare them to Western films! You have to see them in their own light.
To start off you might like something that was popular all over the world - Devdas with Shah Rukh Khan and Aishwarya Rai is a good one. Lovely cinematography, heartbreaking love story all that.
If you want a modern, happy, feel good, cheesy song sort of Bollywood film try something like Kuch Kuch Hota Hai.

Not really Bollywood, but "Bride and Prejudice" is a great Bollywood style film. I've seen it 4 times and liked it more each time.
