Your papaya fruit could have been picked too early, at a stage where it stays green for a long time. In Asia, the green papaya is picked for cooking, best with chicken soup. The next time you buy one, look for one that is light yellow, not green; the color will tell you whether it is about to ripen in a couple days. Otherwise, look for a recipe to cook with your unripenned papaya.
