It's a side effect of a fluid imbalance in your inner ear as an affect of negative gravity forces that result from a gravity dive, which is what you are doing by going rapidly down a hill. A more extreme form of it takes place in NASA's vomit comet for astronaut training. And if you think that is bad, consider what Ron Howard did to his stars and film crew when he filmed the weightless scenes of the movie, Apollo 13, in the vomit comet. The stars were actually weightless in the movie.

"Airtime," like going over a hill on a roller coaster. Negative gravity, almost like a moment of weightlessness. Everything goes up, including your internal organs. The best thing about coasters!
