in dubai, almost in all hotels unmarried couples can share a hotel room, but i would suggest you to go to the following hotels where you can enjoy, as these hotels provide better couple services:
regent beach resort, metropolitan hotel, le meridian hotel, four points sheraton, jebel ali resort and spa,
if you are after something cheaper, then there is
arif castle hotel, capitol hotel, intercontinental hotel

Yes u can very easily but its better u inform them before u take the room they will charge u little more then the usual price but at the othere hand it illegal to live with a women who is not married to u
the better way i will suggest u is book an room for urself double offcourse and after some time u can ask the lady to visit u in the hotel and let to be there it self
