Grab some friends and go to the park or beach, take sandwiches, snacks, cold drinks, frisbees and balls to play.

I would go for a nice hike in a county or state park. Take in some nature and get away from the hustle and bustle of traffic, people and the problems of the world. Even if its only for a few hours.

Go out to the lake and spend the day fishing, bring along a small bbq, or make your own out there and cook up some hambergers or something, maybe rent a small motor boat, cruise around the lake, etc
