Marine biologists study ocean sea life.

An ichthyologist is a specific marine biologist that studies fish.

I'm not certain if there is a specific name for someone studies sharks but an ichthyologist would be one category up from that.

Read about ichthyology here:

http://en.wikipedia.org/wiki/Ichthyologist
http://www.flmnh.ufl.edu/fish/

EDIT: I did some more delving into ichthyology (which I knew about) and discovered that elasmobrachii is the specific classification of sharks and rays (which I didn't).

So therefore elasmobranchology would be the science of sharks and rays and an elasmobranchologist would be the scientist that studies them.
