It doesn't have anything to do with the throne of David. Rollo was a Viking who founded Dukedom of Normandy in 911. In 1066 William the conqueror (the duke of Normandy), conquered England. His coat of arms was two gold lions on a red field. It is not know when the lion became part of Norman coat of arms or if it was used by Rollo.

It is not know why Richard the Lion Hearted add the third lion, it has been speculated that the number of lions were not fixed or that the third lion was added for the English possessions,

The English throne later lost the mainland portion of the dukedom of Normandy but still holds the channel islands.

People knew about lions from the days of the Roman Empire and the Crusades. They were a royal symbol or noble symbol of the Romans. Lions had a reputation for courage and fearlessness. Just a guess. Good question.

For my uneducated friends please take note. The lion is a native creature of the African continent and some parts of Asia. The Romans at some point took these majestic beasts right across the empire along with elephants and other exotic creature to capture the attention of the natives as it surely did with the ancient Britons and other Europeans. The Britons adapted this creature as a symbol of courage and power.

It is a symbol of courage, as the unicorn is a symbol of virtue.
BTW, there were lions in Europe at one time, but they were killed off long before heraldry was invented.
