go way above the knee. They are much longer. Why is there such a difference in lengths?

If you are speaking of real stockings, the ones just above the knee are simply wrong sized.
This happens often with "one size fit all" items, when they are worn by women with just a little meat over their bones.

Better quality stockings are produced in different sizes, and sometime you even find different lenghts. The longer ones are intended to be used with shorter skirts, to avoid to show stocking tops to everyone.

Some are knee hi's and others are thigh hi's it depends on what you need it for or what you like.
