Forensics -- documenting the conditions surrounding the crime committed, and making sure the evidence is preserved. That would be a good use of photography.

What kind of project are you working on? Is this a project for an art class? Are you putting together a portfolio with just photographs?
Or, are you doing a project- like a volunteer project, that you want to include photography as a way to document your project?
For the first option,you can choose just about anything. People make the best subjects, I think. Go to the mall, or any public place and photograph people. Kids love to be photographed- maybe eating ice cream cones, visiting Santa, going to school, etc.
For the second option, I think that would be up to you. What kind of areas interest you? You could work on planting a community garden and photograph the whole process.
Another idea would be supplying books to a local school library badly in need of new books. Start your project out by sending out letters to businesses, etc asking for $ for books, or donations. Then, photograph the books coming in, the sorting, etc. The final part of the project would be showing kids reading the books in the library!
That's the best I can do at 10:00 pm at night.
Good luck. I think it's a good idea to photograph your project. You can use that for admission to college if you need to!

Since this sounds long term, if you live in a different climate area, maybe you can pick out different places and take photos of these spots at different times of the day and during different seasons.
Or maybe you can do something with photos on your city/town or a nearby small town. Take pictures of places of interest or historical significance (if any are around) ..etc.

Small children are always the best photo subjects because we as humans are attracted to how they look. That is a built in human instinct so that we protect them from harm. Photos of mothers and children are also great because everyone can relate to the speical bond between mother and child.
