Akira, simply because it was the first true anime I had seen which I was aware of as such and was completely unlike anything I had seen before when I first watched it in probably 1991 or 1992.

I had seen Laputa before that, loved it but didn't really know what it was as I was a young child. Akira stimulated my subsequent search into the genre. For simple quality, I think Miyazaki can't be beat. I'd go for Princess Mononoke or Spirited Away as the most visually impressive.

The original Ghost in the shell movie was just incredible. And I really love the humor from Project A-Ko and the original Dirty Pair (Kei & Yuri, not Dirty Pair Flash which came later) and much later, Excel Saga. And of course the incredible depth of story from Robotech/Macross, Yu-Yu Hakusho and Ruroni Kenshin.

But my all-time favorite has to be Cowboy Bebop. That show still rules.

Several. Naruto's animation was impressive. Fullmetal Alchemist had a solid story and awesome character development. Fruits Basket was UNBELIEVABLY cute. Cowboy Bebop was just amazing. Bleach, past episode 20, was fantastic.

One of the Ryama Echiban was a son of a champion tennis player, who likes to read magazines of young women as models. He never spends most of the time at the temple with his pet cat (siamese). Then later in the anime series, he finally does spends quality time with his son. His son becomes a popular student and tennis player during his school year. His is shy and doesn't talk as much as other students around him. When challenged against someone on the tennis court, he's eager to win and be unbeatable or be himself.

Full Moon wo Sagashite, it's the best anime by far and I've seen a lot of good ones like Fruits Basket, D.N Angel, Kodocha and more. It's truly a masterpiece.

Evangelion.

The series is amazing and mindblowing towards the end.

I highly recomend this one, but keep in mind that while it appears childish (giant robots) through the beggining, the end and the OAV movies are amazing and very deep, they also mess with your head. The writer of teh series was apparenltly on prozac while writing it and based the different characters on his different moods.
