How did the American Indians cook their food without salt or pepper to make their food tasty?

What they had available varied by region. Since salt occurs naturally they had access to it in various ways.

Many foods, especially meats, are naturally salty.

Some were farmers, some were hunters and some were gatherers of animal and plant foods. They likely seasoned with whatever was available, including herbs and spices.

Interestingly enough, I limit my salt intake due to high blood pressure and never cook with salt. I find many other good ways to flavor my food. I'm sure the Indians could do equally well.

They had plenty of salt available, and used it. There's salt at the surface and underground all over the plains. Morton Salt has a huge mine in Kansas.
