I won the science fair for Central Florida in 1958, a few years ago, by an experiment on electrophoresis.

You use a direct current of 12 volts to cause colored ions to move.

The amount of charge would be related to the molecular mass and the charge (and whether plus or minus).

There was an issue of Scientific American in 1957 that had the experiment in it. Perhaps your library has an old issue.

You need to built or buy a rectifier that would take household current and convert it to low amperage 12 volt direct current. Get two plates of glass about four or five inches wide and about two feet long and put a strip of filter paper between them soaked in an electrolyte solution. Position the sample to be separated on a line in the center of the paper. Attach the wires to the ends of the paper or let the paper drop into an electrolytic solution at each end of the glass plates and attach the wires to poles resting in the solution at each end. Let the electricity work on the materials for several hours.

You will need to be careful you don't electrocute yourself by touching the wires with your bare hands.

This experiment took me all the way to the State Science Fair.

My project in 7th grade-- the question was, "which liquid would be best for watering a plant?" or something like that. I used coffee, orange juice, filtered water, tap water, milk, and.... something else... don't remember, but it was a pretty interesting project and it won 1st place.
While my 8th grade project wasn't great, it definitely was a lot better than the projects that got 1st and 3rd place. 3rd place was about "electromagnetism" and the kid put it together the NIGHT before the science fair! All he had was two pictures in the middle of the board; the hypothesis, results, all the "short" stuff were only one or two sentences, and the abstract paper (kinda like a report) barely amounted to two paragraphs. There were also some typos and grammatical errors. X-O 1st place was fairly decent, but I think there were a couple other projects that did much better. My friend got 2nd place; I don't remember exactly what she did.
In 9th grade, I did "pain tolerance"- wanted to know which had more pain tolerance, boys or girls. But I didn't have a whole lot of time and my school was really small (only 70 kids, in a K-12th grade school) so I didn't have a lot of kids. You might have better luck where you live. One warning about doing "pain tolerance" however, is that I didn't find a lot of research materials on pain itself. If you live in or near a big city, you might find better resources in that city's library. My city's library is good, but it didn't have a lot of info on pain tolerance or some other topics. That got 3rd place.
