My school asks for 2500-3000$ for a two week trip to France, where we will visit St. Etienne, Lyon, Paris and a couple others. We get to stay in a five star hotel and that price covers flight tickets and other necessities, plus spending money. does thst sound reasonable?

Oui.

I'm booking a trip to London right now from the states, and it just covers air and hotel. $1000 minimum right there and we're staying three stars and only for five nights. It sounds like you're getting a pretty good deal.

take an extra $500-700. make sure you go shopping in the duty free shops near the french border. you'll find so much cheap stuff there. :)
