Can I say, for example, we are not ITALIANS but we are BRAZiLIANS?? Or should it be ITALIAN and BRAZILIAN, without the "S"?

You can use the "s". Otherwise it would be like you are talking about one Brazilian or one Italian. It's grammatically correct to put "s" to make it plural.

There are many more ITALIANS in this region that BRAZILIANS...

The number of Americans greatly reduced the number of Norweigans...

I should think either case could be correct. To say, "We are Italian" would be to state your country of origin, whereas to say, "We are Italians" would state your ethnic background. My opinion, anyway, for what it's worth.

hmmm..I'm a native speaker and I'm not quite sure. However, both sound correct. We are americans...meaning several people. We are american.....meaning the same nationality...you really have me curious

when you say "We are italian", the adjective implies"we are Italian (men/women). when you say "We are Italians", it does the same, so either is okay
