Why do Polls have margins? Some as high as 5%?

it's all based on statistics. When you do the regression to get the numbers there is usually a margin for error and the data tells you what it is.

you mean margins for error? you always have to account for some discrepancy.
some may lie, or the data may be accumulated incorrectly.
