The original Summertime, I'm not sure who it's by, though its been covered often and some of them are pretty good. I really like the Rancid version.
If you're looking for a song that pretty much everyone knows and loves, Summer Loving from the Grease soundtrack is an easy way to go.

Summer in the City (Lovin Spoonful), but if your lucky enough to find it: there is a version by a guy named Ray Gomez from the very early eighties that is a fantastic funky rendition. Good luck finding it though, it is only available on vinyl and was only released once.
