Depending on the variety, they should change to red, yellow, orange or a chocolately brown. Most likely...they'll turn orange. I've seen people pull up the plant and hang it up-side-down to force the peppers to ripen but if you have a long enough growing season...that shouldn't be necessary.
You can check online to find out exactly how long habanero peppers should take to mature. (from transplant size) Most sweet peppers can take from 55 - 95 days and most hot peppers can take over 100 days to mature. Habanero peppers can take about 100 days depending on weather, soil conditions etc.

Yes, wait for them to turn color. The color depends on the variety. There are red, orange, yellow , and even brown I believe. At that time they are ripe.

Pick when fully orange but still shiny. Do not let them lose their shine as they can go bad quickly at that point.

you oick them when they are the color that you prefer!they will taste the same!but if you let them go to red,they are really close to drying out ,so if you want a frsh moist pepper you will want ti pick them before then!
