In the eighties, that distinction was held by Alex Van Halen (over 40 pieces and over 20 cymbals/gongs). He has trimmed down his kit quite a bit since those days, as have most other drummers. Neil Peart from Rush still has a large drum kit despite his efforts to trim it down. Right now, I have no idea who has the biggest drum kit.

Chad Smith plays a far more modest set up these days, but Neil Peart of rush and Mike Portnoy of dream Theatre are well known for massive kits (they get all their stuff for free from drum and cymbal companys wanting them to endorse them)

According to the Guinness Book of World Records, it's Chad Smith of the Red Hot Chili Peppers. The kit he played then had 308 pieces.

Not sure who has the most but I am willing to bet that Neil Peart comes close.
