Essentially there are three reasons:

(a) BEOWULF'S MOTIVATION: Because he is trying to seem heroic/noble -- if Grendle (the monster) isn't using a weapon, Beowulf would seem less noble if he fought with a weapon. You can also see this as an example of Beowulf's pride; he wants the glory from killing Grendle and that glory would be diminished if he was killing an unarmed monster.

(b) THE PLOT DEVICE: The poet has already established that Grendle is immune to the effects of human weapons (because he is a descendent of Cain, assumably). Beowulf, therefore, would not have been able to kill him with a weapon. Beowulf doesn't know this, of course, but the audience does. When Beowulf volunteers to fight without a weapon, he is accidentally taking the only course of action that will defeat Grendle.

(c) THE SYMBOLISM: through-out the text, literary parallels are drawn between Grendle and Beowulf. They are both described as "giants," for example. Early on Grendle will care off thirty men at once, and later Beowulf will carry the armor of thirty men. They are also both described as "guests" in the hall, and so forth. Both are seen (by the Christian narrator) as subtly damned. By having Beowulf consistently fight unarmed, the poet is drawing subtle comparisons between him adn the monster he fights, implying that we are and become what we struggle against. This is one of the great things about the epic of Beowulf -- how keen its psychological insights are.

He wanted to gain fame from the battle. He also wanted to seem brave and honorable. He chose to fight with his bare hands , weaponless, because Grendel, the monster, had no waeapons. He wanted it to be fair.

He considered himself just as dangerous as Grendel, and didn't need weapons; also, he might well have guessed that, as is shown later, Grendel couldn't be harmed by weapons. Besides that, it was in a way a sort of show of strength and honor.
