Vet, groomer, trainer, exerciser, farm hand feeding and cleaning up after them, assistant on a breeding ranch, wranglerrounding them up to move pastures, etc..... Lots of things. Look for large farms and ranches and just talk to the owner or foreman about your desires and I am sure they will find something for you to do.
I love horses too. If you are in a city, try the mounted police stables and private boarding facilities.
