So many answers would be fitting but I'd have to say it was LET IT BLEED. From the beginning of track 1 Gimme Shelter to the last track on side B (yes I'm old enough for vinyl), their classic You Can't Always Get What You Want, you just knew this new direction would be the start of a great era for the Stones (including Goats Head Soup, Exile On Main Street, Sticky Fingers). Its easy to put a 'collection' of hits such as HOT ROCKS, but sometimes even fans agree sometimes having just the singles is annoying when most album cuts are a better representation of what the Stones have to offer.

The Rolling Stones spent most of the 1960s trying to be the Beatles, then most of the 1980s and 1990s trying to be the Rolling Stones.
The definitive album would have to be something from the 1970s, probably 'Sticky Fingers'.

The rolling stones haven't made my favorite album yet.
Once they release '60 mins of silence' then it will be the most definitive for me.
