For safety and health reasons:

Pools use chlorine to sterilize the water. But chlorine gas escapes from pools and can build to unsafe concentrations... having high ceilings prevent that by allowing greater air circulation.

Higher ceilings also lower humidity levels and help to prevent corrosion to electrical fixtures (lights) and ceiling saturation which can cause the ceiling to sag and/or collapse.

Additionally, you don't want people being able to easily splash the ceiling with water.

I agree with searay 's answer above. Plus, my first thought was to help disperse the gases from the chlorine in the pool.

noise, moisture and heating/airconditioning problems. Plus the ability to add diving boards in the future.

Because if they're not, it would be so f-ing hot in there! Open space allows the evaporation be scattered.
