I hear people and analyists saying that certain linemen have or don't have this very important "mean streak" trait, so wtf is it?

The "Mean Streak" is about reputation on the the field. The other players know you are mean and nasty. Players like "Mean Joe Green", "Jack Lambert", "Deacon Jones", , today's players lack that true "Mean StreaK" the old school players had.

The "mean streak" is the willingness to play "angry" or "mean" and wanting to not just beat your opponent but break his will. And maybe a bone or two along the way.
It's just a way of playing motivated.
Actually, you'll see some bigger guys like linemen won't have that. One theory I've heard is that guys like that have always been the biggest kid in their class and always had it pounded into their heads to not be bullies. So they sometimes can't "turn it on" on a football field.
You want your linemen to have a mean streak, though, as they generally will be more effective.

A mean streak is all about the attitude. Example would be blocking a guy out of bounds then not leting them back in till the whistle blows, or knocking a guy down then not letting them up.
if a player with a mean streak gets cheap shotted or held ect they will get in the other guys face and let them know it will not go unpunished.

Today it would kinda be playing dirty, holding, chopping ect.

It means that they don't take getting pushed around or losing lightly.

The ultimate Offensive Lineman w/a mean strak was Steve Wiesnewski (spelling?) of the Raiders-he was the meanest and dirtiest player in the NFL.

A lineman has to have a "Mean Steak" because in order to play on the line you have to be tough, physical, nasty and mean. Or other wise you would be eaten alive. You can't be a softy or a Mr. Nice Guy in the NFL while your on the field.
