tip em well steadily and ask for them when you go to the restauraunt. that way the managers notice the repeat business they are generating.
I like to ask for the manager when we're checking out as well, cuz they usually think somethings wrong and when its a possitive comment they seem taken aback.
Also telling them how much you appreciate the job their doing is also nice.

A big tip is really the best way to say thank you. Sorry, no way around it. It's the way they make their living so leaving them a nice tip tells them that their efforts were worthwhile.
* Below 10% tells the waiter/waitress (and whoever you are eating with) that you are a jackass.
* Below 15% says that service was lousy
* 15% says that the service was decent/good
* 20% says that you were quite happy with the service
* 25% says that you loved the service
* More than 25% means that the service was fantastic (and also that your server will probably remember you the next time you come in)
What other people say about return business is true too, and if you request to have the same waiter/waitress again they'll feed good about having return customers. Writing a letter to the restaurant management as someone else suggested probably is a nice idea too.
Remember to be nice to your servers. The way that you treat waitstaff says a lot about your character, so don't be a jerk. Happy dining =)

Tips still remain the better choice.
Although, if you want to go the extra mile... you could always frequent that same restaurant and be a regular.
Others would include giving the waiter/ waitress a good recommendation by mentioning it to their boss.
A simple thank you & a smile would more than suffice as well.

You could always talk to the manager, or the owner, and mention what good service you received. A nice letter praising your waiter/waitress is also good and could be put in to their file.

Tips are still the best way. If they are really good, then give them a tip that's a little above average, I think that is the best way to let them know that you liked their service. Also, being friendly to them helps too.

All the other answers are ok, but I've found that mostly they like it best when you come in sober and DON'T be loud and obnoxious, aggravate other customers, throw up all over, miss urinating in the bathroom bowel or pass out before the check is paid.

Once, we had this awesome server, and we went on the restaurant's website and contacted "Customer Relations" and wrote this really nice letter about her and the entire restaurant/mgmt. staff. We received a letter back thanking us for our kind words and yada yada yada, along with a $25 gift card to the restaurant. Hope this helps.
