and will i run into any other problems

YES!!
Your car's PCM expects to see at least 190 deg F. If it is at 160, the PCM may consider the engine cold, and never move to full fuel control called "Closed Loop".
If it ever does, your mileage will suffer as will your performance, and your car MAY fail an emissions test as well.

An additional consideration;
The thermostat is placed in the cooling system to eliminate over-cooling.
With a cold thermostat, there are areas of the engine block closer to the heat generated by the ignition of fuel (cylinders and cylinder head).
With the lower thermostat, there isn't as uniform an engine block temperature, and the result is accelerated engine wear (hot expands, cold contracts) and where expanded engine metal meats other metal, there is more friction and attrition of material.
Stay with the 190 deg.

Yes all new vehicles are set to use a certain degree thermostat
180,190,195 degree should be about normal

Yes, don't go below 180.
